Blackberry Peach Crumble with Walnuts & Quinoa

Ingredients

Makes 6 Servings

Fruit Ingredients

  • 2 cups fresh blackberries, picked over and rinsed, or 2 cups frozen
  • 1-1/2 lbs. peaches (3-5), pitted and sliced into 1/2-in. wedges
  • 1 Tbsp. cornstarch
  • 1 Tbsp. granulated sugar
  • 1/2 Tbsp. fresh lemon juice
  • Cooking spray for greasing baking dish

Topping Ingredients

  • 1/4 cup old-fashioned oats
  • 1/4 cup all-purpose flour
  • 1/4 cup light brown sugar
  • 1/4 cup chopped walnuts
  • 1/2 cup cooked quinoa
  • 1/2 tsp. ground cinnamon
  • 2 Tbsp. unsalted butter, melted
  • Powdered sugar, for dusting

Directions

  • Preheat oven to 375° F.
  • Grease baking dish with cooking spray.
  • Combine all fruit ingredients in medium bowl and transfer to baking dish.
  • Toss all topping ingredients together and scatter over fruit.
  • Bake for 25-30 min. or until fruit is bubbling and the topping is golden brown.
  • Allow to cool slightly. Serve warm or room temperature with dusting of powdered sugar.
