Mediterranean Pasta Salad

Ingredients

Makes 6 Servings

Salad

  • 1 16 oz. package whole wheat spiral pasta
  • 12 pitted black olives
  • 1 14.5 oz. can diced tomatoes (no salt added), drained
  • 1/3 cup finely chopped red onion
  • 1/4 cup finely chopped celery leaves or parsley

Dressing

  • 1/2 ripe avocado
  • 3/4 cup packed fresh cilantro
  • 1/2 cup nonfat plain yogurt
  • 2 scallions, chopped
  • 1 clove garlic, quartered
  • 1 tablespoon lime juice
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt

Directions

Cook pasta as package directs, drain and rinse. Add olives, tomatoes, onion, celery leaves or parsley. Mix.

Blend all of the dressing ingredients in a blender until smooth. Mix with pasta.
