Sweet Potato Fries

Makes 6 Servings

  • 3 medium sweet potatoes
  • 2 Tbsp olive oil
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 Tbsp Parmesan cheese


  • Preheat oven to 450°F.
  • With a sharp knife, cut sweet potatoes, with skins on, into French fry-style sticks.
  • In a large bowl, combine potato slices, oil, pepper and salt. Toss to coat sweet potatoes in oil and seasonings.
  • Place a wire rack on top of a baking sheet and spread potato slices in a single layer on rack.
  • Sprinkle cheese over sweet potato slices.
  • Bake for 40 minutes, or until desired crispness. Serve immediately.
