Vegetarian Spring Rolls with Spicy Peanut Sauce

Ingredients

Makes 4 Servings

Filling

  • 4 sheets of rice paper
  • 1 cup mixed veggies such as cabbage, red pepper, cucumbers, onions (shredded or julienned)
  • 1/4 cup cilantro leaves
  • 1/4 cup basil leaves

Peanut Sauce

  • 2 tbsp creamy peanut butter
  • 1/2 tsp minced ginger
  • 1 garlic clove, minced
  • 1/4 C chopped cilantro
  • Juice of one lime
  • 1 tsp hot sauce such as Sriracha
  • 1/3-1/2 cup water
  • Pinch of salt

Directions

  • Using a whisk, combine all ingredients for peanut sauce in a medium-sized bowl.
  • To make spring rolls, soak rice paper one sheet at a time for about a minute until soft.
  • Place 1/4 cup of vegetables and several leaves of cilantro and basil in the middle. of rice paper, roll up folding in the ends after first fold.
  • Cut spring rolls in half and serve with spicy peanut sauce.
