2 garlic cloves, minced
2 Tbsp. fresh lemon juice
2 Tbsp. fresh chopped oregano
2 Tbsp. olive oil
1/8 tsp. kosher salt
1/8 tsp. freshly ground black pepper
½ cucumber, peeled, seeded & grated on a box grater
1 cup fat free Greek yoghurt (like Fage)
1 garlic clove, minced
1 tsp. fresh lemon juice
1 tsp. fresh dill, minced + additional for garnish
1 pound chicken tenders
Mix marinade ingredients. Place in a shallow dish and allow chicken tenders to marinade in refrigerator for 1 hr.
Blend Tzatziki ingredients. Set aside.
Preheat broiler on high. Place oven rack 4 inches from heat. Line a rimmed baking sheet with foil and brush with ½ Tbsp. olive oil.
Remove chicken tenders from marinade and arrange in a single layer
on baking sheet.
Broil chicken tenders until browned and cooked through, 8-10 minutes.
Rotate baking dish halfway through cooking to ensure tenders cook evenly.
Place chicken tenders on four plates. Garnish with Tzatziki and a sprinkle of fresh dill.
