Quinoa Pilaf with Dried Fruit and Nuts

Makes 4 Servings

  • 1 T. extra virgin olive oil
  • ½ yellow onion, minced
  • 2 cloves garlic, minced
  • 2/3 cup red quinoa, rinsed
  • 4-5 dried apricots, finely chopped
  • ¼ cup dried currants
  • ¼ cup blanched, toasted almonds, finely chopped
  • 2 green onions, green parts only, thinly sliced
  • 1 t. lemon zest
  • ¼ t. kosher or sea salt
  • freshly cracked pepper


  • Bring a shallow,
    heavy saucepan to medium heat. Add olive oil then add onion, cover and
    cook for about 5 minutes. Add garlic and cook 1 minute further.
  • Add quinoa, stir for
    one minute then add 1 1/3 cup water, cover and simmer about 15 minutes or
    until all liquid has been absorbed and quinoa is fully cooked.
  • Add apricots,
    currants, almonds, green onions and lemon zest. Stir well, season with
    salt and pepper.
